This rustic integral gyuto has a 3-layer blade with a core made of high-performance blade steel "Apex Ultra", with a hardness of at least 66 hrc. The blade is ground slightly convex and has a clear taper. The geometry corresponds to a user-friendly one with a slightly stronger coil, it is a very good performer but at the same time it has enough power reserves for worry-free work.
The knife has a relatively flat profile and is therefore primarily designed for push and pull cutting as well as chopping.
The handle is made of yew wood.
