This powerful and heavy 23 cm Gyuto has a 3-layer blade with a core made of high-performance knife steel Apex Ultra, with a hardness of at least 66 hrc. The blade corresponds to a workhorse with a strong taper. At the coil the blade has a high blade thickness and strong wedge effect, towards the tip the blade becomes increasingly thinner. The tip is finely ground. The entire blade is ground convex, but the convexity decreasing towards the tip.
The blade is suitable for all cutting techniques.
The western handle is made of desert ironwood with a puddle iron bolster.
