A 19 cm Santoku with a 1.2562 blade and a grenadilla handle Lire plus..
It's been a long time since I forged a Santoku. The geometry of this knife corresponds to that of a user friendly. The knife is particularly suitable for pull and push cuts as well as for chopping.
The highly wear-resistant steel 1.2562 with a hardness of 66 hrc was used for the cutting edge.
The Japanese handle is made of grenadilla with a synthetic ceramic spacer.
The blank was forged with optimal temperature control and forming from 60mm thick starting material and then subjected to extensive heat treatment. This process creates a very fine-grained matrix and very small and finely divided carbides. After hardening, the blank was subjected to a deep freeze treatment.
