This 21 cm Gyuto features a three-layer blade with an ApexUltra cutting edge and side layers made from a late medieval wall anchor from a North German castle. The handle is made from oak from a medieval well with a decorative rivet made from medieval iron.
The geometry is user-friendly. It offers excellent cutting performance while maintaining sufficient power reserves for worry-free work.
The knife is suitable for all cutting techniques.
Of course, the blank was forged with optimal temperature control and forming and then subjected to extensive heat treatment (including deep freezing after hardening). This guarantees an optimally adjusted microstructure and finely distributed carbides.
