The cutting edge of this 22 cm Gyuto is made of Vanadis 4 Extra PM steel with a hardness of 64 HRC. The blade's side layers are made of Cronidur 30, a steel that, despite the Vanadis 4 Extra's high tempering temperature of 530 degrees Celsius, still offers good corrosion resistance and a spring hardness of 52-54 HRC. This prevents the blade from bending (which can happen with blades with non-hardenable side layers), and the side layers are less susceptible to scratches.
In terms of geometry, the knife lies between a user-friendly knife and a workhorse knife. The knife has a solid taper, yet the middle section and tip are somewhat more robust than knives with a very pronounced taper. A sharp yet robust knife for worry-free work.
The knife is suitable for all cutting techniques.
The handle is made of blackwood with a spacer and a decorative rivet made of titanium. The tang goes through the entire handle and is riveted with the decorative rivet.
